baked pumpkin oatmeal

Good morning girlies!

I want to share a super easy, healthy and delicious baked oatmeal recipe.

I usually make baked oatmeal at least once a week. I love to stuff it full of sliced fresh fruit, dried fruit and nuts. Oh so scrumptious! Oh and let's not forget how yummy your house smells while it is baking away......


In honor of the cool, crisp mornings that have been knocking at my door, I decided to add a little festive, autumn flair.

BAKED PUMPKIN OATMEAL

The night before, soak 2 cups or oats in 1 cup of buttermilk or 1 cup water + 1 TBSP raw apple cider vinegar.

The next morning, add to your soaked oats:
1 cup pureed pumpkin (I roast my pumpkins and then freeze the puree in 1 cup cubes, I am sure canned pumpkin would work just as well!)
3/4 cup milk
1 egg
2 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. sea salt

Give it a good stir.

Gently fold in raisins, diced apples or diced pears....or all three!

Top generously with walnuts and almonds.

Bake at 350 for 30-40 minutes.

Sit with your favorite warm beverage (mine is a strong cup of coffee!) and enjoy!
